Here’s a recipe that’s great to warm you up at this time of year. The grated goat’s cheese added at the end complements the sweetness of the onions and cider. This recipe will serve four people.
6 onions peeled and thinly sliced
2tbsp creme fraiche
1 litre chicken stock
500ml Saxby’s Original Cider (one bottle)
Leaves stripped from 4-5 stems of thyme
salt & pepper
200g finely grated Nene View Dairy Cordwainer cheese
Melt the butter in a large saucepan and add the onions. Sweat for at least 20 minutes until they are soft.
Mix the creme fraiche and thyme into the onions.
Add the hot chicken stock and a bottle of Saxby’s Original Cider, bring to the boil and simmer for at least 10 minutes.
Season well and serve with grated Nene View Dairy Cordwainer cheese sprinkled on top.
